My girls love to bake with me in the kitchen and a friend recently gave me a recipe for homemade gluten free cookies that seemed easy enough to let the kids do it pretty much on their own – which they LOVED!
It only uses 4 simple ingredients!
Mix with an electric mixer:
- 1 cup peanut butter
- 1 cup sugar (plus extra for rolling)
- 1 egg
- ½ cup semisweet chocolate chips
They just put it in the mixer all at once and let it blend until it was thoroughly mixed.
Then, they rolled the dough into balls (or shapes that somewhat resembled a ball) and dipped them in sugar. If I were giving these cookies as gifts, I might monitor the sugar rolling, as ours were quite drenched in sugar. But, my purpose was really letting the girls have ownership of this recipe.
Next, they placed them on a nonstick cookie sheet (some of the dough was crumbly, but it worked out okay).
Once they are placed on the cookie sheet, gently flatten each cookie, just slightly, with the palm of your hand. They had fun doing this step!
Bake 6-8 minutes at 350 degrees until just browned on the bottom. Be careful not to over bake! Let them cool and enjoy! These homemade gluten free cookies are delicious and so easy to make!!

Thanks for the recipe, looking forward to trying these. I didn't see an oven temperature. Do we bake them at 350?
